No Bake No Problem

John has been sick and a little sad about how it makes his job so much harder each day. To help lift his spirits I decided to make him a treat. I remember my Dad making these every month or so when I was growing up. IMG_4425.jpg

No Bake Cookies

  • 1 3/4 Cups Sugar
  • 1/2 Cup Milk
  • 1 Stick of Butter
  • 3 Tbsp. Cocoa Powder
  • 1/2 Cup Peanut Butter, creamy or chunky
  • 1 tsp. Vanilla
  • 1/4 tsp. Salt
  • 3 Cups Quick Cooking Oats
  • 1 – 1 1/2 Cups Coconut, shaved {we prefer unsweetened}

Add sugar, milk, butter, & cocoa powder to a medium sized saucepan and put over medium/high heat.

Stir ingredients until combined. Bring mixture to a boil for 3-5 minutes.

Remove from heat and add peanut butter, vanilla, salt, oats, and coconut to the saucepan.

We use a cookie scoop to portion out cookies. Drop scoopfuls onto wax or parchment paper and allow to cool for 10 minutes or until cookies are firm. {Full disclosure, the mixture is really good when it’s warm and we always have one while they’re still gooey!}

Makes {about} 25 cookies.
