Chocolate Chip Banana Bread Muffins


This past weekend, John was on a campout with the boy scouts. So {E} and I decided to make a special breakfast treat. We had some pretty overripe bananas and some chocolate chips in the fridge that were calling my name.  Cue the Hardman Chocolate Chip Banana Bread Muffins!


Here’s our recipe:


1/2 Cup Sugar

1 Cup Flour

1/2 tsp. Vanilla

1/2 tsp. Baking Soda

1/2 tsp. Cinnamon

1 Tbsp. Sour Cream

1/2 Tbsp. Milk

1 Egg

3 Tbsp. Butter

2 Ripe Bananas

1/2 Cup Chocolate Chips, separated


Combine ALL ingredients in one big bowl! {1/4 cup chocolate chips goes IN and 1/4 cup chocolate chips stays OUT}

Use a cookie scoop to place batter in greased OR paper lined muffin tins. Each tin should be 3/4 full. Then use the remaining chocolate chips to put on top of each muffin!

Bake at 350 degrees fahrenheit for 15 minutes or until they are golden brown.

Makes about 10 muffins. Enjoy!




{E} loved them and we even saved some for Dad.
